Keeping up with the sweet potato theme, this sweet potato, Apple and Carrot Bake is sure to win you points at dinner, act as a lovely side dish and will leave your home smelling warm and cozy on a cool winter evening.
Cooking time: 45 minutes to an hour
2 Medium Sweet Potatoes peeled and cut into ¼ inch rounds
2 Apples peeled and diced
2 large carrots peeled and chopped
1 medium Onion, slivered
3 cloves of garlic, minced
2-3 TBSP Butter
Salt & Pepper
Preheat the oven to 350F. Peel, chop and slice your apples, potatoes, carrots, garlic and onions. Once everything is ready, I like to toss it all into casserole dish, season with salt and pepper and just mix everything around with a wooden spoon. Or, for those of you who prefer some order, feel free to layer the potatoes, apples, carrots onions etc…..whatever assembly method you choose assemble it in a 8x10 glass casserole dish. The last thing to do is spoon a few small scoops of butter onto your veggie mix. I like to put a little scoop in each corner and one in the middle. Finally, pop the lid on (tin foil lids work just fine) and put it on the oven for 45 minutes to an hour.
I know I mentioned this makes a lovely side dish but I’m guilty of enjoying it as my main course.
